Easy Southern Peach Cobbler

- Preheat oven to 350 degrees.
- Coat a casserole or corning ware pan with Pam. I actually prefer using Baker's Joy for this one.
- Pare, core and cut fruit into slices.
- Put slices in a bowl and sprinkle 1/4 cup of the sugar over the fruit.
- Let sit for about 5 or 10 minutes,.
- Combine dry ingredients.
- Combine wet ingredients and add to dry.
- Put the fruit into your casserole pan.
- Cover with the batter.
- The dough will rise, and cover the peaches while baking.
- Bake for about 45 minutes. Serve warm with ice cream.

This recipe held up to the billing of 'Easy'. I did make one change, I used Splenda instead of sugar; it still came out tasting wonderfull. I would make one suggestion - increase the amount of peaches; 1 1/2 to 2 cups just barely covered the bottom of my 2 quart baking dish. I think 2 1/2 to 3 cups of peaches would make this cobbler MUCH better. I plan to try that the next time I make this dish.<br/><br/>I did bake mine for the full 45 minutes with no burning.
