Fried Green Tomatoes

- 4 large green tomatoes, sliced thick (or ripe tomatoes)
- 59.14 ml self-rising flour
- 14.79 ml cornmeal
- 1.23 ml sugar
- 0.25 ml cayenne
- 2.46 ml dried herbs (of your choice)
- 118.29 ml soymilk
- 29.58 ml oil
- salt and pepper
directions
- Mix flour, cornmeal, sugar, cayenne, and herbs.
- Dampen tomato slices with soymilk.
- Coat with flour mixture.
- Heat oil to medium in a heavy, nonstick frying pan.
- Fry tomatoes, turning once or twice, until golden brown.
- Remove tomatoes to serving platter.
- Sprinkle with salt and pepper.
- To bits of browned flour in pan, add 1/2 cup milk.
- Cook and stir until a gravy is formed.
- Pour over tomatoes.
- Serve immediately.
