  • Preheat oven to 350 degrees.
  • Grease a 4-quart casserole dish.
  • Bring broth, salt and pepper to a boil in a 2-quart saucepan. Stir in grits and whisk until completely combined.
  • Reduce heat to low and simmer until grits are thick.
  • Add garlic cheese and milk. Stir.
  • Gradually stir in eggs and butter, stirring until all are combined.
  • Pour mixture into prepared dish. Sprinkle with cheddar cheese and bake for 45 minutes or until set.

Well, I am a new stay-at-home mama (our son, Jack, was born on June 1, 2006). :) To prepare for his arrival, I cooked and froze enough food for 6 weeks. So, my new passion is OAMC, which I will try to continue at least on a small scale. It's just too hard to prepare dinner every day with an infant in my arms! I hardly use any cookbooks besides recipezaar and www.hillbillyhousewife.com (she has yummy frugal recipes that we love).
